Alright, lemme start off by saying that the title is a little clickbait cause if you count salt, pepper, and the oil used to fry the shrimp egg rolls, it’s TECHNICALLY five ingredients. If you really wanted to, though, you could opt not to season with salt and pepper and throw it in the air fryer instead; then, it would truly be a two-ingredient recipe! With that out of the way, let me tell y’all how delicious this simple recipe is. Like it really has no business being this tasty for how easy it is.

It is juicy and crispy, has great texture, and is perfect for entertaining because of how quickly it can come together. This is also great to make to freeze and fry ahead of time whenever you’re ready to party.

To prepare, we’ll have to clean up our shrimp by de-pooping. The easiest method I’ve found was to use a toothpick or skewer, poke the shrimp in the back along the vein, and lift it on out. Then, we’ll shell the shrimp, leaving just the tail behind for the presentation.
Alternatively, you could buy cleaned and tail-on shrimp and skip this step entirely.

For the sake of this easy and simplified recipe, I’m just seasoning this with salt and pepper, but I’ve also used fish sauce, sugar, minced garlic, and others to enhance the flavor further. Really, any way you season it, I’m sure it would turn out fire.

I’m deep frying the eggrolls in 350-degree canola oil (peanut oil is my favorite oil to fry in, but I’m broke, so I’m just using what I have on hand). You want to fry the shrimp eggrolls for just a couple of minutes until they turn golden brown; it happens quickly, so make sure you’re paying attention.

was thinking of shelling, then making a quick ‘stock’ w/ the shells & seasoning, reduce & brush on shrimp before rolling?
